This was really good. I added carrots to mine because that’s how my local Chinese place makes it. Delicious the carrots take in so much of the flavor definitely recommend.
We’ve been making this recipe weekly since we found it !! I don’t do the fish sauce but follow everything else exactly as written....it’s perfection !
My husband and I agreed this was a killer curry recipe. Subbed ground ginger powder and forgot to add fish sauce. Just 1 TB brown sugar. Otherwise followed the recipe exactly. YUM. Even our (somewhat particular) little kiddos ate their whole serving.

Sep 2020. Fam actually liked this bcuz the coconut flavor wasn’t too strong. We used curry paste but not the curry powder (didn’t have any); still good. Doubled everything except chicken; used peas as filler instead.
Lol thanks for being honest. I recommend trying to recipe again but this time seasoning your chicken with thyme and crushed pimento, some scallion (spring onions) and all the other seasoning like garlic, onions and abit of scotch Bonet pepper (maybe like half), -continue

Sooo delicious! Honestly, this is the best curry I’ve had. It’s creamy with the full-fat coconut milk. I also added steamed broccoli and cauliflower and it was PERFECT!
So delicious!! Big hit with the family especially the kids. Added water chestnuts and lessened the brown sugar since it was already sweet for me.
Sooo good. Had to substitute a lot of ingredients but as long as you have onion, ginger, curry powder, and coconut milk it will turn out great! We used parsley and mushrooms instead of some of the ingredients also...thanks for sharing!!
